TAKUMA, Executive Chef
Born and raised in Sakai, Osaka, Takuma Shoji has been part of Moto’s extended family for many years and feels more like a younger brother than a family friend.
Since 2006, Takuma has worked as a fishmonger and sushi chef, building expert knowledge of seafood and traditional Japanese techniques.
After training in Osaka, he brought his skills to London, where he continues to share authentic Japanese food culture and craftsmanship.
At OTON, Takuma is the creative force behind the menu, combining sushi-grade ingredients with the warmth and comfort of Japanese home cooking.
His food reflects the spirit of Osaka — honest, generous, and made to be shared around the table.
